Easy Potato Recipes: Steamed Potatoes With Bacon

I've never known a man as restless as Jan. He can't stay still in one place unless he's having or he's had fifteen bottles of colored liquid. Sunday was no exception. I expected him to wake up and wonder, "Where to now?" again.

Any other wife would have naturally evolved a mechanism for dealing with husbands who can't stay home.  A semi-automatic mouth that can spit verbal ammunition in rapid succession comes to mind. I almost got myself a mouth upgrade but can you honestly heap harsh words on a man who smells like potatoes, bacon and cheese in the morning?

Steamed Potatoes Ingredients:

1 clove of garlic, minced
1 potato
1 strip bacon
3 thin cheese slices
black pepper
crushed basil leaves
olive oil

1. Peel potatoes, wash and cut in circles. Arrange on a sheet of aluminum foil.

2. Add salt and pepper.

3. Arrange bacon strip and cheese on top of potato.

4. Drizzle with olive oil.

5. Hold up two ends of aluminum foil until they meet and fold the edges to seal. Fold the other ends to seal as well. Do not wrap too tightly or the cheese will stick.

6. Cook potatoes in a steamer for 20-30 minutes or until you can penetrate through the potato with a toothpick.

Wife's Verdict:

Jan cooked this for breakfast but it reminded me of a dreamy dinner dish, or one that dieters eat in small bites in a moment of renewed resolve. The aroma was absolutely captivating and gave the impression of airiness. The olive oil and basil were perhaps the key ingredients that made it taste light. The garlic and pepper balanced the mild taste while the bacon and cheese added texture.

Jan's Quip: "I'm just making this up as I go."

  1. Mmmm looks great! I'm on the look out for recipies to use up what we have in the freezer which at the moment is lots of bacon and rooster potatoes! I think I'll try this and whack some roasted veg on the side!

  2. Thanks for the visit Greg :)

  3. You will absolutely love this Harriet :)
